01 - Preheat oven to 425°F. Line large baking sheet with parchment paper or lightly grease.
02 - In large mixing bowl, toss sweet potato cubes with olive oil, cinnamon, salt, pepper, and maple syrup or honey if using until evenly coated.
03 - Spread sweet potatoes in even layer on prepared baking sheet, ensuring pieces are not overcrowded for proper caramelization.
04 - Roast for 25–30 minutes, tossing halfway through cooking, until sweet potatoes are golden-brown with crisp edges and tender interior.
05 - Remove from oven. Serve hot, optionally garnished with fresh herbs or light drizzle of maple syrup.
