Tender sweet potatoes roasted with cinnamon and sugar for a fragrant, golden, and flavorful side dish or snack.

# What You Need:

→ Vegetables

01 - 4 medium sweet potatoes (about 2 lbs), peeled and cut into 1-inch cubes

→ Oils & Fats

02 - 2 tbsp olive oil or melted coconut oil

→ Spices & Seasonings

03 - 2 tbsp granulated sugar
04 - 1½ tsp ground cinnamon
05 - ¼ tsp fine sea salt

# Directions:

01 - Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
02 - In a large bowl, toss the sweet potato cubes with olive oil until evenly coated.
03 - In a small bowl, mix together the sugar, cinnamon, and salt.
04 - Sprinkle half of the cinnamon-sugar mixture over the sweet potatoes and toss to coat.
05 - Arrange the coated sweet potatoes in a single layer on the prepared baking sheet.
06 - Roast for 25–30 minutes, flipping halfway through, until the potatoes are golden, caramelized, and tender.
07 - Remove from the oven and immediately sprinkle the remaining cinnamon-sugar mixture over the hot sweet potatoes. Toss gently and serve warm.
