→ Topping

10 - 1 cup powdered sugar for dusting

# Directions:

01 - Dissolve yeast in warm water. Let stand for 5 minutes until foamy.
02 - Add sugar, salt, egg, and milk to yeast mixture. Whisk until fully combined.
03 - Stir in 2 cups flour until smooth. Add melted butter and remaining flour, mixing until soft dough forms.
04 - Turn dough onto lightly floured surface. Knead for 4–5 minutes until smooth and elastic.
05 - Place dough in greased bowl, cover, and let rise in warm place for 1 hour until doubled in size.
06 - Punch down dough and transfer to floured surface. Roll into 1/2 inch thick rectangle. Cut into 1/2 inch wide by 3 inch long strips.
07 - Heat vegetable oil in deep skillet or pot to 350°F.
08 - Fry dough strips in batches, turning occasionally, until golden brown and puffed, about 2–3 minutes per batch.
09 - Remove with slotted spoon and drain on paper towels. Dust generously with powdered sugar while warm. Serve immediately.

# Expert Tips:

01 -
  • The fry shape creates more crispy edges than traditional beignets, meaning maximum crunch in every bite
  • They come together faster than you would expect, and people cannot stop grabbing them
02 -
  • Oil that is too cold makes dough absorb grease and turn soggy, too hot burns the outside before the inside cooks
  • Dust the sugar immediately after frying because the warmth helps it stick and melt slightly into the crust
03 -
  • Substituting bread flour for half the all-purpose flour creates a chewier, more substantial fry
  • Let the dough rise in a slightly warm oven with just the light on to create the perfect environment
