01 - In a large mixing bowl, add rolled oats, peanut butter, honey or maple syrup, ground flaxseed or chia seeds, unsweetened shredded coconut if using, vanilla extract, and a pinch of salt. Stir thoroughly with a spoon or spatula until the mixture is evenly blended.
02 - Gently fold in the mini dark chocolate chips until distributed throughout the mixture.
03 - Refrigerate the mixture for 10 to 15 minutes to firm up, making it easier to shape.
04 - Scoop out portions and roll into 1-inch balls using your hands. Set the formed balls onto a tray or plate lined with parchment paper.
05 - Place the tray in the refrigerator and chill for at least 20 minutes before serving. Store energy balls in an airtight container in the fridge for up to one week.
