Sweet Strawberry Brownie Kabobs (Print Page)

Fudgy brownie bites, strawberries and marshmallows threaded on skewers, finished with melted chocolate and sprinkles.

# What You Need:

→ Brownie Layer

01 - One box brownie mix (about 15 ounces), plus eggs, oil, and water as per package instructions

→ Fruit & Marshmallow

02 - 24 fresh strawberries, hulled
03 - 24 large marshmallows

→ Optional Decoration

04 - 3.5 ounces melted dark or milk chocolate
05 - Colorful sprinkles, to taste

# Directions:

01 - Preheat the oven according to the brownie mix package. Prepare the batter as instructed, then spread it evenly into a square baking pan. Bake as directed and allow to cool completely.
02 - Once cooled, cut the brownies into 24 even, bite-sized squares using a sharp knife.
03 - Thread one brownie square, one strawberry, and one marshmallow onto each skewer. Repeat the sequence until each kabob contains two of each ingredient.
04 - Place the assembled kabobs on a serving platter in a single layer to prepare for decoration.
05 - Drizzle melted chocolate evenly over the kabobs and garnish with sprinkles as desired. Allow chocolate to set before serving.

# Expert Tips:

01 -
  • You can whip these up in under an hour and still look like you planned ahead all day.
  • The colors and layers have a way of disappearing fast at any gathering, and I always end up wishing I made a few more.
02 -
  • I once rushed brownie cooling and ended up with crumbs everywhere—patience makes for perfect cubes that stay on the skewers.
  • Chilling strawberries for a little while before assembly keeps them firmer and balances the marshmallow’s sweetness.
03 -
  • Cut brownies with a damp knife for neat edges—no more sticking or crumbling.
  • Swap in other berries if strawberries aren’t in season; I’ve loved blueberries and even blackberries for a tangy spin.
