Golden, cheese-filled pockets with savory sauce and favorite toppings, cooked quickly in a pie iron over campfire or stove.

# What You Need:

→ Bread

01 - 8 slices white or whole wheat sandwich bread

→ Sauce & Cheese

02 - 1/2 cup pizza sauce
03 - 1 cup shredded mozzarella cheese

→ Toppings

04 - 12 to 16 slices pepperoni or salami (optional)
05 - 1/4 cup sliced black olives
06 - 1/4 cup diced bell peppers
07 - 1/4 cup sliced mushrooms
08 - 1/4 teaspoon dried Italian herbs (optional)

→ For Brushing

09 - 2 tablespoons butter, melted

# Directions:

01 - Place the pie iron over the campfire or on a stovetop for 2 to 3 minutes to heat thoroughly.
02 - Apply melted butter to one side of each bread slice. Arrange 4 slices, buttered side down, on a clean work surface.
03 - Spoon 2 tablespoons of pizza sauce onto each bread slice. Sprinkle evenly with mozzarella cheese and selected toppings. Add a light dusting of dried Italian herbs if using.
04 - Top with the remaining bread slices, buttered side facing up, to enclose the filling.
05 - Carefully position each sandwich into the preheated pie iron. Close and latch securely. Trim any excess bread extending beyond the edges.
06 - Hold the pie iron over medium campfire heat, cooking each side for 3 to 4 minutes until bread is golden and cheese is thoroughly melted.
07 - Open the pie iron and remove the pizza pockets. Allow to cool for a short time before serving.
