Luscious layers of shortbread, whipped cream, and juicy strawberries—no baking required!

# What You Need:

→ Strawberries

01 - 1 lb fresh strawberries, hulled and sliced
02 - 2 tbsp granulated sugar

→ Cream Layer

03 - 8 oz cream cheese, softened
04 - 1/2 cup powdered sugar
05 - 1 tsp vanilla extract
06 - 1 1/2 cups heavy whipping cream, cold

→ Base & Assembly

07 - about 30 shortbread cookies or vanilla wafer cookies
08 - extra strawberries for garnish (optional)

# Directions:

01 - Toss sliced strawberries with granulated sugar in a bowl. Let sit for 10-15 minutes until they release their juices.
02 - Beat cream cheese, powdered sugar, and vanilla in a large bowl until smooth and creamy.
03 - In a separate bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until fully combined.
04 - Line the bottom of a 9 x 9 inch dish with half of the cookies. Spread half the cream mixture over the cookies, then top with half of the macerated strawberries including their juices.
05 - Repeat layers with remaining cookies, cream mixture, and strawberries.
06 - Cover with plastic wrap and refrigerate for at least 2 hours or overnight to allow flavors to meld and cookies to soften completely.
07 - Garnish with extra strawberries before serving if desired. Slice and serve chilled.

# Expert Tips:

01 -
  • The cookies soften into cake-like layers while keeping just enough crunch for texture contrast
  • You get all the nostalgia of strawberry shortcake without turning on your oven during hot weather
  • This dessert actually tastes better after sitting overnight, making it the ultimate make-ahead treat for stress-free entertaining
02 -
  • The cookies need time to soften, so don't rush the chilling step or you'll miss that cake-like texture that makes this special
  • Use a light hand when folding the whipped cream into the cream cheese mixture to keep it airy and fluffy
  • This dessert can be made a full day ahead, which actually improves the texture and flavor integration
03 -
  • Pat your strawberries dry after hulling and slicing if they're particularly wet from washing, as excess water can make the dessert too soggy
  • For the most professional presentation, wipe your knife with a damp cloth between each slice to keep the layers neat and pretty
