High Protein Frozen Peanut Butter Greek Yogurt Bites (Print Page)

Creamy frozen Greek yogurt bites blended with rich peanut butter for a protein-packed treat that's ready in minutes.

# What You Need:

→ Yogurt Mixture

01 - 1½ cups (370 g) plain Greek yogurt, nonfat or 2%
02 - ½ cup (120 g) natural peanut butter, smooth or crunchy
03 - 3 tablespoons honey or maple syrup
04 - 1 teaspoon vanilla extract

→ Toppings

05 - 2 tablespoons mini chocolate chips
06 - 2 tablespoons chopped roasted peanuts
07 - 1 tablespoon unsweetened coconut flakes

# Directions:

01 - Line a mini muffin tin or small silicone molds with paper liners, or lightly coat with nonstick spray.
02 - In a medium mixing bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir until the mixture is completely smooth and well blended.
03 - Spoon the yogurt mixture evenly into the prepared molds, filling each cavity about three-quarters full.
04 - Sprinkle mini chocolate chips, chopped peanuts, and coconut flakes over the filled molds, gently pressing the toppings into the surface so they adhere.
05 - Place the tin or molds in the freezer and freeze for at least 2 hours, or until the bites are completely firm.
06 - Once fully frozen, remove the bites from the molds. Transfer to an airtight container and store in the freezer. Serve directly from the freezer for the best texture.

# Expert Tips:

01 -
  • No oven, no stove, no excuses: if you can stir, you can make these.
  • Each bite packs about five grams of protein, so you can feel smug while eating what tastes like candy.
02 -
  • Do not skip greasing or lining the molds, or you will be chiseling frozen yogurt out of a tin at midnight and questioning your life choices.
  • Letting the bites sit at room temperature for two to three minutes before eating transforms them from ice cubes into something miraculously creamy.
03 -
  • Use the thickest Greek yogurt you can find, thin yogurt turns grainy and icy when frozen instead of staying luscious.
  • A tiny pinch of salt in the base mixture makes the peanut butter flavor sing louder than any amount of extra sweetener ever could.
