# What You Need:

01 - 4 slices rustic country bread or sourdough

→ Cheese & Spreads

02 - 4 oz fresh goat cheese, softened
03 - 2 tbsp cream cheese, optional
04 - 2 tbsp honey

→ Butter

05 - 2 tbsp unsalted butter, softened

→ Optional Add-Ins

06 - 1 tsp fresh thyme leaves or chopped rosemary
07 - 1/2 cup baby spinach or arugula

# Directions:

01 - Combine goat cheese and cream cheese in a small bowl, mixing until completely smooth and spreadable.
02 - Spread cheese mixture evenly onto two bread slices. Drizzle 1 tbsp honey over each. Add fresh herbs and greens if desired, then top with remaining bread slices.
03 - Spread softened butter generously on the outside surfaces of both sandwiches.
04 - Place skillet or griddle over medium heat until hot.
05 - Place sandwiches butter-side down in hot skillet. Cook for 3 to 4 minutes until bottom is golden brown and crispy.
06 - Flip sandwiches carefully. Cook another 3 to 4 minutes, pressing gently with spatula, until both sides are golden brown and cheese is melted.
07 - Remove from heat, slice diagonally, and serve immediately while warm.
