Fresh radishes roasted with garlic and herbs for a mellow, crisp-tender side dish ready in 35 minutes.

# What You Need:

→ Vegetables

01 - 1 lb fresh radishes, trimmed and halved
02 - 3 cloves garlic, minced

→ Oils & Seasonings

03 - 2 tbsp olive oil
04 - 1/2 tsp sea salt
05 - 1/4 tsp freshly ground black pepper
06 - 1/2 tsp dried thyme or Italian herbs

→ Garnish

07 - 2 tbsp fresh parsley, chopped

# Directions:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Place halved radishes in a large bowl. Add minced garlic, olive oil, salt, pepper, and thyme. Toss until radishes are evenly coated.
03 - Spread the radishes in a single layer on the prepared baking sheet, cut side down for even browning.
04 - Roast for 20 to 25 minutes, stirring halfway through, until radishes are golden and fork-tender.
05 - Transfer to a serving dish and sprinkle with fresh chopped parsley before serving. A squeeze of lemon juice adds brightness.

# Expert Tips:

01 -
  • Radishes lose almost all their peppery punch in the oven and turn surprisingly sweet and tender.
  • The entire dish comes together on one pan with barely any cleanup.
02 -
  • Cut side down placement is the single biggest factor in getting those crispy golden edges instead of soggy bottoms.
  • Stirring halfway through is not optional because the radishes on the edges of the pan cook much faster than the ones in the center.
03 -
  • Use the smallest radishes you can find because they roast faster and have a more delicate texture inside.
  • Let the baking sheet preheat in the oven for two minutes before adding the radishes and you will get an instant sizzle that locks in flavor.
