- Preheat the oven to 430°F (220°C). Line a large baking tray with parchment paper and set aside.
- Place the peeled and cut carrot fries in a large bowl. Toss with cornstarch until evenly coated. Add olive oil, smoked paprika, garlic powder, sea salt, and black pepper, then toss thoroughly to ensure every piece is well seasoned.
- Arrange the seasoned carrots on the prepared baking tray in a single, non-overlapping layer. Bake for 22–25 minutes, flipping halfway through, until the edges are golden brown and crispy.
- While the fries bake, combine crumbled feta cheese, Greek yogurt, extra virgin olive oil, lemon juice, minced garlic, fresh herbs (if using), and black pepper in a mixing bowl. Mash and stir until the mixture is creamy and fully blended.
- In a small bowl, whisk together the honey, chili flakes, and apple cider vinegar until well combined. Adjust the amount of chili flakes to your preferred heat level.
- Arrange the crispy carrot fries on a serving platter. Drizzle generously with the spicy honey and serve the feta dip alongside for dipping.
