# What You Need:

→ Carrot Fries

01 - 1¾ lb carrots, peeled and cut into fries
02 - 2 tbsp cornstarch
03 - 2 tbsp olive oil
04 - 1 tsp smoked paprika
05 - ½ tsp garlic powder
06 - ½ tsp sea salt
07 - ¼ tsp black pepper

→ Feta Dip

08 - 5.3 oz feta cheese, crumbled
09 - 3.5 oz Greek yogurt
10 - 2 tbsp extra virgin olive oil
11 - 1 tbsp lemon juice
12 - 1 small garlic clove, finely minced
13 - 1 tbsp fresh dill or parsley, chopped (optional)
14 - Freshly ground black pepper, to taste

→ Spicy Honey Drizzle

15 - 2 tbsp honey
16 - ½ tsp chili flakes (adjust to taste)
17 - ½ tbsp apple cider vinegar

# Directions:

01 - Preheat the oven to 430°F (220°C). Line a large baking tray with parchment paper and set aside.
02 - Place the peeled and cut carrot fries in a large bowl. Toss with cornstarch until evenly coated. Add olive oil, smoked paprika, garlic powder, sea salt, and black pepper, then toss thoroughly to ensure every piece is well seasoned.
03 - Arrange the seasoned carrots on the prepared baking tray in a single, non-overlapping layer. Bake for 22–25 minutes, flipping halfway through, until the edges are golden brown and crispy.
04 - While the fries bake, combine crumbled feta cheese, Greek yogurt, extra virgin olive oil, lemon juice, minced garlic, fresh herbs (if using), and black pepper in a mixing bowl. Mash and stir until the mixture is creamy and fully blended.
05 - In a small bowl, whisk together the honey, chili flakes, and apple cider vinegar until well combined. Adjust the amount of chili flakes to your preferred heat level.
06 - Arrange the crispy carrot fries on a serving platter. Drizzle generously with the spicy honey and serve the feta dip alongside for dipping.
