Spicy buffalo chicken and melted mozzarella wrapped in golden dough and baked into shareable game-day bites.

# What You Need:

→ Chicken & Sauce

01 - 2 cups cooked chicken breast, shredded
02 - 1/3 cup Buffalo wing sauce
03 - 2 tablespoons cream cheese, softened
04 - 1 tablespoon finely chopped fresh chives (optional)

→ Cheese

05 - 12 small mozzarella balls (bocconcini) or 12 mozzarella cubes (1 inch each)

→ Dough

06 - 1 package (16 oz) refrigerated biscuit dough or pizza dough, divided into 12 portions

→ Topping

07 - 2 tablespoons unsalted butter, melted
08 - 1 teaspoon garlic powder
09 - 1/2 teaspoon dried parsley

# Directions:

01 - Preheat oven to 375°F. Line a baking sheet with parchment paper.
02 - In a mixing bowl, blend shredded chicken, Buffalo wing sauce, cream cheese, and chives until the mixture is evenly coated.
03 - Press each dough piece into a 3-inch round using hands or a rolling pin.
04 - Place 1 tablespoon of the chicken mixture and 1 mozzarella ball at the center of each dough round. Fold dough around filling, pinching to seal. Roll gently to form a ball and arrange seam-side down on the prepared baking sheet.
05 - Stir melted butter with garlic powder and parsley. Brush the tops of each dough ball with the seasoned butter.
06 - Bake in the preheated oven for 20 to 25 minutes, or until dough is deeply golden and cooked through.
07 - Let bombs cool on the sheet for 5 minutes before serving warm. Accompany with ranch or blue cheese dressing as desired.

# Expert Tips:

01 -
  • The cheese stretch when you pull these apart is every bit as satisfying as you imagine—don&apost skip the dip.
  • It became a favorite because it disappears faster than any other snack I've served during nail-biting games.
02 -
  • Don&apost overfill the bombs—I learned the hard way and had lava cheese leaks all over my baking sheet once.
  • Pinching the seams tightly is the difference between oozy perfection and exploded filling.
03 -
  • Letting the bombs rest before digging in keeps the lava cheese from burning your mouth.
  • A small offset spatula is great for moving the hot bombs without tearing the bottoms.
